- 3 lb. catfish (whole, skin on)
- 3 lemongrass (smashed and tied together with an outer leaf)
- 6 garlic cloves
- 1 inch ginger
- 5 dried red chilies (re-hydrated with hot water)
- 2 whole roots (turmeric, or 2 tsp turmeric powder)
- 4 Tbsp. fish sauce
- 1 handful cilantro (best if roots are intact)
- 6 cups water
- 1/4 cup oil
- 2 lemongrass stalks (sliced)
- 6 garlic cloves (minced)
- 1 inch ginger (sliced)
- 2 shallots (diced)
- 2 tsp. paprika
- 2 Tbsp. fish sauce
- 2 Tbsp. white rice (toasted till golden over low heat and grind to powder)
- 10 pearl onions (peeled)
- 1/2 cup banana (tender core of, stem or lotus roots, sliced into 1/4 inch rings)
- 1 Tbsp. white pepper (ground black and, each)
- salt (to taste)
- rice vermicelli (Dried, cooked per package instructions)
- 4 hard-boiled eggs (quartered or sliced)
- 2 limes
- 1 handful chopped cilantro
- chili flakes (Toasted)
- 1/2 cup all purpose flour
- 1/4 cup rice flour
- 1 pinch salt (and turmeric powder)
- 3 shallots
- 1/2 cup split chickpeas
- 1 opo squash (medium, calabash, cut into 1/2 inch thick, 3 inches long sticks)
