I was skeptical of what it would taste like, but willing to try anything once! Didn't realize how much coconut pie doesnt really taste coconutty, and the other ingredients with the squash texture really do give the essence of coconut! One batch ended up making 2 pies for me since the crust I used was a bit shallow, so I'm not sure what I would have done if i only had one crust.. but overall this is an awesome recipe!
