I had about 10-12 cups of summer squash, but kept the sugar for filling at the one cup, and increased the lemon juice to 3/4 cup. It’s not as sweet then, which is my preference. I doubled the crumb topping ingredients, except for the sugar which I only increased to 3/4 c. I used gluten free flour and added a bit more than the 1/2 cup. I’ve made this twice now and shared it with others and they are amazed that it isn’t apples!
