- 2/3 cup dal (mixed, lentils, preferably equal portions of green mung bean, black bean, chana dal, matar dal, red kidney bean, rajma, toor dal etc)
- 1 onion (large size, cut into thin slices)
- 2 tsp. ginger paste (adrak)
- 1 tsp. garlic paste (lahsun)
- 1 1/2 tsp. chilli powder (lal mirch)
- 2 tsp. turmeric powder (haldi)
- 1 1/2 tsp. coriander powder (dhania)
- 1 tsp. cumin powder (jeera)
- 3 green chillies (hara mirch)
- 1 1/2 cups vegetables (chopped, preferably pumpkin, potato, ash gourd, spine gourd, radish etc)
- salt (as needed)
- 1 1/2 Tbsp. mustard oil
- 1 1/2 cups water (+ for soaking lentils)
- 1 handful coriander leaves (fresh)
