Minute Steaks with Spaghetti

  • 10 tablespoons olive oil
  • 1/3 pound mushrooms (halved or quartered depending on size)
  • 1 onion (peeled and finely diced)
  • 1 clove garlic (peeled and minced)
  • 5 1/4 ounces sliced ham (diced)
  • 3 tablespoons tomato paste
  • 3/4 cup dry white wine
  • 3/4 cup vegetable stock
  • 1 cup fresh oregano (a little reserved for garnish, remainder chopped)
  • 7 ounces spaghetti
  • 3 1/2 ounces ciabatta (slightly stale, ground to fine breadcrumbs)
  • 3 1/2 ounces grana padano cheese (grated)
  • 8 ounces minute steaks
  • 4 tablespoons all-purpose flour
  • 2 eggs (beaten)

    Directions

    1. For sauce, heat 2 tbsp oil in a saucepan and sauté mushrooms for 5 mins. Add onion, garlic and ham and cook for 2 mins. Add tomato paste. Add wine and stock, bring to a boil and simmer for 10 mins, stirring occasionally. Add oregano.
    2. Meanwhile, cook pasta in boiling salted water according to package instructions. Drain and return to pan.
    3. For steaks, mix breadcrumbs with cheese. Season steaks then roll in flour, eggs then the breadcrumb mixture. Heat 2 tbsp oil in a large frying pan and sear 2 steaks, turning, for 5 mins, until golden brown on both sides. Repeat with remaining steaks and oil.
    4. To serve, toss pasta with 3/4 of the sauce. Arrange steaks and pasta on serving plates and garnish with oregano. Serve with remaining sauce.
