- 1 lb. white beans (dried, navy are nice but any smaller ones will do picked over and rinsed, soaked or brined overnight, See Brining Beans Traditional or Instant Pot Methods)
- 1 stalk celery (left in large pieces, they will be removed, later)
- 2 bay leaves
- 5 sprigs parsley (4 or)
- 4 slices bacon (diced or same amount of salt pork, diced)
- oil (as needed)
- 16 oz. kielbasa sausages (1 package ,14 to ,cut on the diagonal 3/8ths inch thick)
- 1 lb. chicken
- 2 boneless skinless chicken breasts (of 3 to 4 boneless skinless thighs, cut in half; pieces should be 3 to 4 inches across and three inches or so in length)
- 3 lb. pork shoulder (1 1/2 to ,roughly cut into chunks about 4″ x 2 1/2′ x 1 1/2″)
- 1 onion (large, peeled and chopped)
- 4 stalks celery (3 to ,1/2″ dice)
- 3 large carrots (2 to ,peeled, 1/2″ dice)
- 4 cloves garlic (minced)
- 3 cups chicken broth
- 28 oz. tomatoes (can whole, peeled, crushed, with juice)
- 1/3 cup pure maple syrup
- 1 tsp. marjoram (dried)
- 1 tsp. mustard powder (dried)
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1/4 cup chopped parsley (plus extra for garnish, if desired)
- red wine vinegar (for serving)
