- 1 Tbsp. olive oil
- 1 zucchini (small, thinly sliced)
- 1/2 cup green onions (chopped)
- 6 English muffins (halved and toasted)
- 14 oz. Ragu® Pizza Quick Sauce (1 jar)
- 2 Tbsp. grated Parmesan cheese
- 1 cup part-skim mozzarella cheese (or shredded Muenster, about 4 oz.)

Directions
- Preheat oven to 400°. In 12-inch skillet, heat olive oil over medium-high heat and cook zucchini and green onions 5 minutes or until tender; set aside.
- On ungreased baking sheet, arrange muffin halves. Evenly spread Sauce on each half, then top with vegetable mixture and remaining ingredients. Bake 10 minutes or until cheese is melted.
