- 1/2 lb. yellow onions (chopped, about ½ large onion - Don't slice like I did in the photo, I decided that diced onions would create a better, less stringy texture! :)
- 1 tsp. salt (plus more, to taste)
- 2 Tbsp. unsalted butter (divided in half)
- 8 oz. white mushrooms (chopped)
- 1 clove garlic (minced)
- 1/8 tsp. dried thyme
- 2 Tbsp. white wine (I used pinot grigio)
- 1/2 lb. granny smith apples (peeled and chopped, about 1 apple)
- 1/2 tsp. granulated sugar
- 1 oz. gruyère cheese (grated)
- 1 oz. goat cheese (from a log, not crumbled)
- 1/2 Tbsp. fresh chives (minced, optional)
- 1 box mini fillo shells (frozen)
