- 2 oz. pancetta (finely diced)
- 1 onion (large, finely chopped)
- 2 celery ribs (thinly sliced)
- 4 garlic cloves (finely chopped)
- 1 leek (white and pale green parts thinly sliced, 1 dark top thickly sliced and reserved)
- salt
- freshly ground pepper
- 1/2 lb. green cabbage (Savoy or other, coarsely shredded)
- 14 oz. diced tomatoes
- 1 cup black eyed peas (dried, or 1 15-oz can black-eyed peas, drained and rinsed)
- 2 qt. water
- 3 parsley sprigs
- 1 bay leaf
- 3 thyme sprigs
- 15 oz. red kidney beans (drained and rinsed)
- 2 oz. penne (or other pasta of your choice, I find chunky ones do better in this soup)
- fresh basil (Shredded)
- parmigiano reggiano cheese (Grated)
