- 1 cup lowfat milk
- 3 eggs
- 1 lb. ground chicken breast
- 1/2 cup chopped parsley (finely)
- 1/2 cup parmigiano-reggiano (grated)
- 1 Tbsp. lemon zest
- 1/2 tsp. red pepper flake
- 1 tsp. kosher salt
- 1 tsp. pepper
- 3 carrots (roughly chopped)
- 1 onion (roughly chopped)
- 2 celery stalks (roughly chopped)
- 2 cups red wine
- 6 cups chicken stock
- 48 oz. diced tomatoes (juice included)
- 2 cups ditalini pasta
- 2 yams (peeled and chopped into 1/2 inch cubes)
- 1 bunch kale (roughly chopped)
- 2 zucchini (chopped into 1/2 inch cubes)
- 2 handfuls green beans (ends removed and chopped into 1 inch pieces)
- 1 parmigiano reggiano (rind, you can save these in the freezer for soups)
