- 1 onion (medium-large, diced)

- 3 cloves garlic (minced)
- 14 oz. diced tomatoes (with juices)

- 1 tsp. Worcestershire sauce
- 1 bay leaf
- 1 tsp. fresh thyme (minced, or 1/3 tsp dried)
- 1 tsp. Italian herb seasoning (dried)
- 3 oz. baby spinach (about 4 c lightly packed fresh, or you can use regular spinach, coarsely chopped)
- 15 oz. beans (such as cannellini, garbanzo, or kidney, drained and rinsed)

- pepper
- parmigiano reggiano cheese (Freshly grated, for garnish, optional)
