- 200 grams suet (shredded beef)
- 2 cups dark brown sugar (packed)
- 2 Tbsp. candied lemon peel
- 2 Tbsp. candied orange peel
- 1 fresh lemon
- 1/2 cup apple cider vinegar
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cloves
- 1/2 tsp. ground allspice
- 1/2 tsp. mace (ground)
- 1/2 tsp. ground ginger
- 1/2 tsp. ground coriander
- 1/2 cup dark rum (good quality)
- 1 cup apple cider
- 10 inches crust (; plus two, 4 1/2-inch crusts)
- 2 cups all purpose flour
- 1/2 cup pure cane sugar
- 2 sticks unsalted butter
- 2 large eggs
- 4 Tbsp. milk (chilled, or cream)
