- 1 onion (finely diced)

- 2 garlic cloves (grated)
- 1 tsp. sesame oil
- 2 Tbsp. brown sugar
- 2 Tbsp. fish sauce
- 2 Tbsp. white vinegar
- 4 red chillies (depending on heat level you want. Sliced on the diagonal)
- 2 shallots (sliced on the diagonal)
- 1/2 cucumber (deseeded and cut into batons)
- 1/2 cup shredded carrot
- 1 handful lettuce leaves (or baby spinach leaves)

- 3 tsp. sesame seeds (or a seed mix to sprinkle over the top)
- 1 lime (squeezed over the top at the end)
- 3 cups jasmine rice (cooked)
