- 4 oz. cream cheese (at room temperature)
- 1 Tbsp. fine granulated sugar
- 1/4 cup sour cream
- 1/2 tsp. pure vanilla extract
- 1 cup whole milk
- 2 large egg yolks (reserve the whites)
- 3 Tbsp. sugar
- 1 1/2 Tbsp. cornstarch (12g, sifted)
- 1/8 tsp. kosher salt
- 4 oz. milk chocolate (good quality, finely chopped)
- 1 1/4 Tbsp. unsalted butter (at room temperature)
- 4 egg whites
- 1 cup fine granulated sugar
- 1/4 kosher salt
