- 2 bolillo rolls (large Mexican, about 4 cups)
- 1 tsp. salt
- 1 tsp. fresh cracked pepper
- 1 tsp. granulated garlic
- 2 tsp. dried cilantro
- 1 tsp. chile piquin (crushed, or red pepper flakes)
- 1/2 tsp. annatto powder (or Bijol seasoning, sold in Latino food stores)
- 2 boneless chicken breast (large, butterflied and pounded thin)
- 2 cups cracker meal (homemade or store bought, or seasoned spicy bread crumbs)
- 1 cup flour (seasoned with salt and pepper)
- 2 large eggs (whisked)
- 3 Tbsp. Tapatio Hot Sauce (or your favorite…)
- 2 cups oil (for frying I used grapeseed oil)
- 4 chicken (milanesa,, see recipe)

- 2 oz. red wine vinegar
- 1 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 1 clove garlic
- 1 chipotle in adobo

- 8 oz. baby spinach
- 1 red bell pepper (large, sliced)
- 2 avocados (sliced)
- 6 radishes (sliced)
- 2 cups croutons
- 8 oz. queso oaxaca (shredded)
