- 280 grams chestnut mushrooms (baby, cleaned, slice the end of stalk & remove)
- 1 handful dried porcini mushrooms (soaked in 250 ml, 8.5 fl oz boiling water in a heatproof jug)
- red onion (small, thinly sliced)
- 3 leeks (baby, or 1 medium leek, washed & sliced)
- 1 celery stick (washed & finely chopped)
- 1 large garlic clove (chopped)
- 30 grams taleggio cheese (roughly chopped, you can use brie, camembert, or cheddar as an alternative)
- 5 sprigs fresh thyme (washed & leaves removed)

- 1 1/2 Tbsp. vegetable oil (I use rapeseed)
- 15 grams butter (I use unsalted)
- 1 tsp. plain flour

- 4 Tbsp. oatmeal stout (Brehons Irish, or equivalent)
- puff pastry sheet (All butter, bought & ready rolled)
- 1 medium egg (beaten)
