- 1 lb. ground beef
- 1 onion (small to medium-sized, dealer’s choice, diced)
- 1/2 green bell pepper (diced)
- 2/3 cup beef stock
- 1 oz. taco seasoning
- 1 tsp. chili pepper (chipotle)
- 15 oz. corn (drained)
- 16 oz. black beans (or of pinto, drained)
- 4 oz. jalapenos (diced, I like heat so I use the whole can, but feel free to use less, omit, or substitute with green chiles)
- 15 oz. salsa (con queso, I used Tostitos)
- 1 tater tots (28 ounce package, extra crispy, you’ll have about 2 dozen or so leftover)
