- 2 Tbsp. jalapeno chile (minced, after seeds are taken out)

- 1/2 tsp. fennel seeds (ground)

- 1 1/4 lb. ground bison
- 1 large egg (beaten)
- 1/4 cup chopped cilantro
- 1 tsp. chopped fresh sage

- 1/2 tsp. ground black pepper (freshly)
- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground cloves
