This is a foolproof and very easy recipe. I use alternative sweeteners, usually stevia in this recipe. I do find that I need to add more sweetner than the amount equalling 1 cup of sugar. With the alternative sweetner this is low carb and very diabetic friendly! Tonight I am serving it as dessert. I half fill individual dishes with the curd, then put a layer of homemade blueberry jam and top it with whipped cream, perfect for summer entertaining!

So easy! Not sure why you would ever make it any other way! I have made it now lots of times and it always comes out beautifully
