- 2 cups water
- 1 pkg. Knorr® Vegetable recipe mix
- 14.5 oz. tomatoes (whole or diced, undrained)
- 2 Tbsp. chopped cilantro (fresh)
- 1 cucumber (small, peeled, seeded and chopped)
- 1/2 cup green bell pepper (chopped)
- 1/8 tsp. hot pepper sauce
- 1 Tbsp. lime juice (to 2)
- 1/2 tsp. ground cumin
- salt (to taste)
- seasoned croutons (optional)

Directions
- Let's go South of the border...
- Bring water and Knorr® Vegetable recipe mix to a boil in a small saucepan. Reduce heat and simmer for 2 minutes.
- Combine soup, tomatoes and cilantro and process in a blender or food processor in batches until smooth. Stir in remaining ingredients except croutons. Chill until completely cool. Serve with croutons, chopped fresh cilantro and a dollop of sour cream. Everyone will say olé, we promise.
