  • 1 cup red lentils
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion (finely chopped)
  • 1 cup chopped celery (finely)
  • 1 tablespoon minced garlic (or less, but I like a lot of garlic)
  • 1/4 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon chile powder
  • 1 can roasted tomatoes (I like petite dice tomatoes for soup)
  • 2 cups vegetable broth
  • 1 teaspoon green Tabasco sauce (or other hot sauce of your choice. Green Tabasco is fairly mild, so you may want less if you use a stronger hot sauce.)
  • salt
  • ground black pepper
  • 1/4 cup lime juice (fresh squeezed, 2-3 limes, or less if you're not that into lime)
  • 1 cup chopped fresh cilantro
  • sour cream (optional)
  • limes (optional)

Really nice as a soup or a stew. I used 2 cans of rotel tomatoes, a bit more hot sauce and topped it with avocado. I'll definitely be making again.

Awesome! Perfect! I roasted my tomatoes with olive oil in the oven instead of a can.

Delicious! The only thing I did different was use sriracha sauce as my hot sauce. Will definitely fix again.

Yum! Made it exactly like the recipe stated..... excellent!

Delicious! I added boneless chicken breasts to cook with the stew, then shredded at the end right before adding the lime and cilantro. I also did not soak the lentils first, just cooked them with the stew. I added avocado when serving, which went well with the lime and cilantro. This was easy to make and delicious! My husband loved it also. We both went back for more!

I wasn’t feeling well today so the hubby cooked this up! It was great! He did go a little off recipe by adding some salsa verde which made the consistency a bit runnier but the flavor was still great!

I really liked this dish. I’m not usually a fan of lime, but this dish is well a balance of flavors. I also like the heat of the recipe without a big heavy feeling of a meat stew. Will definitely make again!

Love this soup - reminds me of chicken tortilla w/out the chicken of course Kids love too! I’ve made this at least a dozen times. It’s in the rotation 😀

Easy and delicious! I added red peppers, cholula hot sauce and a beer to the broth and turned out great with a small kick. Definitely saving this recipe for more fall and winter dinners.

i made a double batch....needed more than double the spices and a lot more simmer time to reduce liquid but it was perfect in the end. will make again.

I liked it. I cooked the lentils a wee bit to long, so they were slightly mushy. It was very tasty though.

Way way way to much lime for this dish it needed something to handle that much lime maybe some blackbeans. Disappointed will not make again.

I added potatoes, carrots, corn, avocado and fresh tomatoes. I didnt use any celery and didn't have any cilantro but it still tasted good. I also omitted the sour cream and reduced the amount of lime. Still tasted amazing!

I loved this recipe! I didnt use the tobasco sauce and just used plain chopped tomatoes rather than roasted. Added some Smoked Paprika to add to the depth of flavour and only used half the chilli powder so it was suitable for my little girl. Tasted amazing with the sour cream and Naan bread. Excellent, tasty, veggy option! Thankyou.

I used carrots instead of celery I added fresh tomatoes, corn and green peppers for spice. Very flavorful but I would use less lime next time. I would definitely make this again.

I love this recipe! Perfect for vegetarians and vegans without the sour cream. My family and I make it all the time. It's filling and very healthy, as well as delicious with a lot of flavor.

I have made this recipe several times and i love it! Great combo of flavours. I use chicken stock instead of vegetable stock. Sometimes I add pearl barley as well.

For something with 7,000 "yum"s you'd think this would have more than one review. Anyways, just made it. Not overly impressed. Like the reviewer before me said, you need to cook the lentils for about half the time this calls for, which I did and they were good. I should note that I heavily modified it, since you can tell this is a liquid burrito I figured it needed beans and green bell pepper and I couldn't imagine it without the black beans I added. Overall it's not bad but its nothing impressive. Another note: I love limes, a lot, but 3 was far too many for this. Stick with two
