- 15 oz. kidney beans (drained and rinsed, I used light red)
- 15 oz. great northern beans (drained and rinsed, you can use canellini beans as well)
- 1 red bell pepper (diced)
- 1 red onion (small, diced)
- 1 jalapeño (or serrano chili, diced, optional)
- 1/4 cup fresh cilantro (chopped)
- 2 avocado (chopped)
- 1/2 cup olive oil
- 2 Tbsp. lime juice (freshly squeezed)
- 1/4 cup red wine vinegar
- 1 Tbsp. lemon juice
- 1 Tbsp. honey
- 1 garlic clove (minced)
- 1/2 tsp. ground cumin
- 1 Tbsp. salt
- 1/2 tsp. ground black pepper
- 1/4 tsp. ancho chili powder (or any other chili powder)

I've made this recipe several times during the pandemic/stay at home order. I love this dish, very filling and tasty. I've doubled the recipe every time. I did omit the honey and avocado. As I've made such large batches, I didn't want the avocado to get mushy. I definitely recommend rinsing the beans in a colander if you want it to look clean and fresh. This is great with fish, chicken, beef......any meat. I've also put it on fresh spinach. What I love is that it completes a meal when I don't feel like making any sides. Also works for a filling snack too!
