Turned out nicely. Would make it again
I made it with one russel potato and one sweet potato.
Stuffed with olive oil, beans, onions, cashew, 1 TB chia, 1 TB flaxseed, pinch nutritional yeast. TJ Chilli lime seasoning, tj 21 seasoning, A LOT of Black pepper, cumin.
Salsa, Guac, corn WOULD have been wonderful but I didn't have any.
Balsamic might be a nice flavor for a different variation
