- 6 cups corn kernels (fresh, from 8-10 cobs, save 6 of the stripped cobs for simmering the soup)
- 1 cup yellow onion (chopped)
- 1/4 tsp. chili powder (depending on your heat preferences, plus additional to taste)
- kosher salt
- freshly ground black pepper
- 2 cloves garlic (chopped)
- 4 cups chicken broth
- 1/2 cup sour cream
- 1/2 cup grated cotija cheese (plus additional for garnish, substitute Parmesan or Romano if Cotija is unavailable)
- 1 Tbsp. fresh lime juice
- 1 tsp. lime zest (grated)
- 2 Tbsp. chopped cilantro (divided)

Delicious. I used Parmesan instead of cotijo which was nice, and mild chilli powder which I’m not sure worked as it should have. I might add a little spicy sauce the next time I make it, which I definitely will 👍🏻 the lime is amazing.

Wonderful! I have made it many times and will again in season as well as out of season. Just susitute frozen corn. Although fresh is always better.
