  • 1/4 cup olive oil
  • 6 cups corn kernels (fresh, from 8-10 cobs, save 6 of the stripped cobs for simmering the soup)
  • 1 cup yellow onion (chopped)
  • 1/4 teaspoon chili powder (depending on your heat preferences, plus additional to taste)
  • kosher salt
  • freshly ground black pepper
  • 2 cloves garlic (chopped)
  • 4 cups chicken broth
  • 1/2 cup sour cream
  • 1/2 cup grated cotija cheese (plus additional for garnish, substitute Parmesan or Romano if Cotija is unavailable)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest (grated)
  • 2 tablespoons chopped cilantro (divided)

    Delicious. I used Parmesan instead of cotijo which was nice, and mild chilli powder which I’m not sure worked as it should have. I might add a little spicy sauce the next time I make it, which I definitely will 👍🏻 the lime is amazing.

    Wonderful! I have made it many times and will again in season as well as out of season. Just susitute frozen corn. Although fresh is always better.
