    Shockingly delicious. My family mixed it up and did soups and salads for Christmas Day. I made this soup and a Thai Curry Coconut Squash soup. This Mexican Street Corn Soup was the runaway favorite out of the 5 different soups present! Flavors were amazing. The jalapeno was just the right amount of heat. Only mother found it too hot for her. I want to convert this recipe to a chip dip now.

    This is a new favorite in my house!! We added season chicken to ours for some protein. We also added only a quarter of a minced jalapeño because I am a baby when it comes to spice and it was perfect for me. You still got a little bit of the heat, but could still taste all of the different elements of the soup!
