  • 1 avocado (large)
  • 3 green onions
  • 1/2 bunch cilantro
  • 1 tablespoon jalapeno (finely chopped)
  • 8 strips smoked bacon (hardwood)
  • 1/2 cup cotija cheese (or queso fresco or feta -- add cheese to preference, we like 1/2 cup)
  • 1/2 black beans (canned cup, optional)
  • 1/2 cup mayo (full fat regular, no substitutes)
  • 3 tablespoons lime juice
  • 1/4 teaspoon lime zest
  • 1/8 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon Sriracha sauce
  • 1 pinch salt and ground black pepper

    This was AWESOME!!!! I like things spicy, so I added more jalapeños. I also mixed grilled corn on the cob with skillet corn. GREAT flavor!!!! New side fish favorite!!!!!

    This is good! The dressing is 20/10. I used canned corn - definitely would have been better with grilled corn.

    double all the spices, siracha, and jalapeno and it would be 5 stars. Perfect way to spice up your regular pasta salad go to. Will make again.
