Great! For a more authentic taste I added Tajin, lime juice from 1lime, and a few dashes tapatio hot sauce

Delicious! It was a hit at a recent get together! I used queso fresco instead of cotija and it was still perfect. I also used two 14oz bags of frozen corn, so it had about a half cup more than the recipe required - really didn't make a difference in the taste. Will definitely make again! Taste best when warm.
