Description
This fully loaded chopped salad is a complete meal featuring seared shrimp, black beans, plenty of veggies, crunchy tortilla strips, and a zesty cumin-lime dressing. Bagged coleslaw helps you get it on the table in a hurry. Salty cotija cheese carries the Mexican theme, but feel free to substitute feta if that’s what you have on hand. The recipe, which makes 11 cups, is a Yummly original created by Kate McMillan.

- 1/4 cup fresh lime juice (plus more to taste)
- 1 clove garlic
- 2 Tbsp. honey
- 2 1/2 tsp. ground cumin (divided)
- 1 tsp. salt (divided)
- 6 Tbsp. extra-virgin olive oil (divided)
- 2 bags coleslaw (11 oz. each; save dressing for another use)
- 2/3 cup cilantro sprigs (lightly packed)
- 1 red bell pepper
- 1 cup cherry tomatoes
- 1 can black beans (about 15 oz.)
- 1 large avocado
- 1/2 cup crumbled Cotija cheese (or feta)
- 1 lb. large peeled and deveined raw shrimp (21 to 30 per lb., with tail on or removed)
- 1 tsp. chili powder
- 1/2 cup tortilla strips (salted, or use broken tortilla chips)

Directions
- Make dressing: Add 1/4 cup lime juice to a small bowl. Mince garlic and add it to the bowl along with honey, 1 tsp. cumin, and 1/2 tsp. salt. Whisk in 1/4 cup olive oil. Taste and add more lime juice if you like. Set aside.
- Add cole slaw to a large mixing bowl. Roughly chop cilantro and add it to the bowl. Cut bell pepper into 1/4-inch pieces, cut tomatoes in half, and add vegetables to the bowl. Drain and rinse black beans and add them to the bowl. Cube avocado and add it to the bowl. Sprinkle cotija on top.
- Heat a large frying pan over medium-high heat. Add shrimp to another bowl and toss with remaining 2 Tbsp. olive oil, remaining 1 1/2 tsp. cumin, the chili powder, and remaining 1/2 tsp. salt.
- Add shrimp to the heated pan. Cook, turning once, until shrimp are opaque when cut in the thickest part, about 6 minutes total.
- Add as much dressing as you like to the salad bowl and toss to coat. Transfer salad to a platter or wide serving bowl. Top with shrimp and tortilla strips.
