  • 1 small yellow onion (— chopped)
  • 2 jalapenos (small, — or 1 large jalapeno, core and seeds discarded, diced)
  • 2 red bell peppers (— cored and chopped)
  • 1 teaspoon oregano
  • 1/4 teaspoon black pepper
  • 1 can reduced sodium black beans (— — 15 ounces, rinsed and drained)

    Really flavorful but - I think the next time I make it - I’ll double the shrimp quantity as I prefer a higher protien-to-carb ratio.

    Delicious! Very filling, serving size is closer to 6-8. We used 1 can of tomatoes instead of 2, and added an extra half cup of water. We will definitely be making this again.
