- 1 tsp. coconut oil (I opted to use 1 tablespoon olive oil instead)
- 1 yellow onion (medium, chopped)
- 2 celery stalks (chopped)
- 3 carrots (chopped)
- 4 cloves garlic (pressed or minced)
- 2 jalapeños (seeded and chopped)
- 3 1/2 cups water
- 28 oz. diced tomatoes
- 1 1/2 cups black beans (cooked, or 1 can, 15 ounces black beans, rinsed and drained)
- 1 1/2 tsp. ground cumin
- 2 tsp. fine sea salt
- 1/2 cup quinoa (dry/uncooked)
- 1/4 cup chopped fresh cilantro
- 1/8 tsp. cayenne pepper (for extra heat, optional)
- freshly ground black pepper
- 1 wedge lime (diced avocado, crumbled tortilla chips, grated cheese, sour cream…, optional)

Very good. We will make this again. Excellent with lime, sour cream, and tortilla chips.

Very delicious! Makes 6 servings. I added a habanero and a lot more salt and pepper, and used broth instead of water. Corn would be a good addition!

Spicy! Very flavour and enjoyable but be careful on the spice level if you can’t handle it 😂

This is delicious! I accidentally put a little more cumin in but otherwise followed the recipe. It’s really good. I put vegan cheese in it but it is delicious with or without! Yum!

Wasn't sure at first....husband grimaced at the mention of quinoa but it was a resounding success!

This is a delicious cold weather meal. I tweaked the recipe a bit to include ground hamburger, smoked paprika and a touch of chipotle powder. I gave it 4/5 stars because I felt it necessary to re-season the chili once the quinoa was cooked.
Additionally, I served this meal with a wedge of lime, sour cream, green onions and Monterey Jack cheese....seems like a lot but it was perfect! Having a bit of avocado would have made it even better.

This recipes a hit in my home. My daughter actually asked what was in it. The only changes I made was that I doubled the recipe and since my kids used the canned tomatoes, I used a few spoons of tomato paste instead. Delish!

This recipe was very good i do recomend it. Even if you are not vegan its still very tasty. If you are not vegan i recomend adding a pound of hamburger i didnt do this but im sure it would be tasty.

Very nice soup. Great flavor and easy to make. Did not have jalopeno peppers, so left that out and upped the cayenne pepper and black pepper. Still had a nice kick to it. Will make again
