It was so good!! I added onion at the beginning step. I did this for a meal prep for the week.

Good! I added a little cumin and some turkey sausage for extra flavor. Super easy to throw together!

Did it without any beans, still very yummy! Added a bit of cumin for extra flavor

Great dish, easy, delicious, healthy. Received many compliments at the potluck dinner!

Loved it! So easy to prepare. It’s great for busy nights. I would add one less jalapeño next time to tone down the heat and add more beans, maybe pinto.

My girlfriend got me started on this five years ago, and this is an absolutely amazing recipe my four-year-old loves it and it’s very healthy

It was so easy and delicious I added more beans (cooked sugar beans). Next time I will add basil, and oregano for a depth of flavor a great way to use quinoa

It turned out great! We didn't have the peppers but a little extra lime gave it a nice tang. The prep time is longer than listed, but it is worth it!

Wow. This was delicious. I left out the jalapeño because I was sharing it with young kids. It still had incredible flavor. I topped mine with a little shredded cheddar and sour cream. My husband left out all the dairy and mixed a little spicy avocado hummus (from Costco) into his. I'm not sure which one I liked better. Definitely going to have both versions again.

Loved this dish! Really easy to make but think 3 chillies is too much as it overwhelms the dish. Next time i'm using two! Really good with perhaps a salad.

Absolutely loved this dish. Great as a side dish or on its own. I even served it at my parties to my non-vegan friends and they loved it. Very tasty.
