- 1 Tbsp. olive oil
- 1/2 white onion (diced, 55 g)
- 3 cloves garlic (minced, 1 1/2 Tbsp or 9 g)
- 1 pinch sea salt (each, + black pepper, plus more to taste)
- 1 vegetable (quality, bullion, or 1 cup, 240 ml vegetable broth)
- 1 chipotle pepper in adobo sauce (minced, plus 1 tsp adobo sauce, plus more to taste)
- 1/2 cup diced tomatoes and green chilies (I used Muir Glen fire roasted tomatoes with green chilies)
- 1 Tbsp. ground cumin
- 1 Tbsp. chili powder
- 1/4 tsp. ground cinnamon (optional)

Quarantine left me with only canned pinto beans so I adjusted the recipe accordingly (less liquid and decreased cooking time), otherwise I had all other ingredients. These beans were delicious! Easy to make, great flavor, and easily customizable if need be. I made them the other night and already have plans to make them again as soon as I get more pinto beans.

These beans were as proclaimed. They were dead easy and deadly delicious! I didn't have any chipotle pepper in adobo sauce or green chilis so I added about 1/2 cup green chili sauce, about a tablespoon of hot sauce, and 1/2 teaspoon red pepper flakes. I also didn't have vegetable broth on hand so I used chicken broth (nobody send me hate mail, 'kay?). I also squirted in some lime juice right at the end of cooking. They were delicious! I was able to divide into 3 sides for my family of four: one that night for dinner and 2 into the freezer. They were all gone two days later, and my biys are insisting that I make more! In future, I would hold the lime juice until serving time to keep the flavor bright.
