- 1 cup rice (unprepared)
- 2 cups chicken broth (OR water)
- 14 oz. diced tomatoes
- 2 fresh tomatoes
- 1 onion (chopped small)
- 3 cloves garlic (minced)
- 1 cup pinto beans (cooked, or about ½ of a 14 oz can of pinto beans)
- 4 flour tortillas (large, I used my homemade whole wheattortillas)
- 3/4 lb. ground beef (the leaner the better)
- 1/2 jack
- 16 oz. shredded mexican cheese blend
- 1/2 cheddar
- 2 cups frozen corn (thawed OR 1 can of corn, drained, drained)
- 16 oz. green chile sauce (or salsa verde)
- 8 oz. enchilada sauce
- 3 Tbsp. chili powder
- 1 1/2 Tbsp. paprika
- 1 1/2 Tbsp. cumin
