- 1 onion (finely chopped)
- 3 garlic cloves (minced)
- 500 grams ground beef (mince, lean)
- 1/3 cup tomato paste
- 1 1/4 cups white rice (Note 1)
- 2 1/2 cups chicken broth (/stock, low sodium)
- 400 grams corn kernels (drained, Note 2)
- 400 grams black beans (drained, or other beans)
- 1 capsicum (/bell pepper, diced)
- 1 cup green onions (/shallots)
- 2 cups cheese (shredded, anything that melts! Note 3)
- 1/2 tsp. cayenne pepper (Note 4)
- 1 1/2 Tbsp. dried oregano
- 3 tsp. cumin
- 3 tsp. coriander
- 3 tsp. onion powder
- 2 tsp. paprika
- 1 1/2 tsp. salt

Very tasty! I served it with Fritos, but it would make great burrito stuffing.

Turned out extremely tasty. Cooked on low for 20 mins and used saffron rice. Would be a great side or fill for enchiladas or borritos.

My family really likes this and we make it often. I use two taco seasoning packets instead of the spices plus we leave out the cheese as we think it tastes better without it.

I used brown rice even though it wasn't recommended and it still came out good in my opinion. 2/3 kids ate dinner so I'll take that as a win.

A little bland, will add extra spice to the leftovers tomorrow. Probably better as a wrap.

My husband & son enjoyed this. Needed more time to cook the rice. It was still crunchy after the allotted time. Overall, a good dish. Used the leftovers for taco filling the next day.

amazing! made it in the pressure cooker. 3mins high pressure,10mins natural release and it was perfect! add some crumbled taco chips for cunch and top with sour cream/avocado

used beef instead of chicken broth. used half amt of spices that were called for plis tsp fresh hot pepper. usedpinto beans instead of black.

It was amazing!! I used the 90 second rice and it worked perfect I didn’t have coriander ( or even know what it is) spices in so I used taco seasoning. Definitely making again!!

Excellent! Doubled the recipe because dishes like this are usually even better the next day, and I like leftovers.

Wife and I really enjoyed this. I used Jasmine rice and had to cook for about 10 mins longer. I also added more salt and black pepper at the end, to taste. It was a bit bland, otherwise. If you want spicy, add more cayenne pepper. The recipe is right, the rice and other ingredients does a great job balancing the “spicy” out of the cayenne.

I made it without cheese (because my BF doesn’t eat cheese) but it was still delicious and very easy to make. I used basmati rice and it took me five minutes longer to cook. Will stay standard in my menu!

It was really good. Needed more salt and I added the spices right after adding the meat so it could absorb into the meat
