- 3 ears of corn (shucked)
- 1 Tbsp. butter (melted)
- 3 Tbsp. mayo
- 3 oz. cotija cheese (crumbled)
- 1/8 tsp. cayenne
- 1/8 tsp. paprika
- 1 lime (medium, plus more for garnish)
- 2 Tbsp. chopped cilantro (plus more for garnish)

Directions
- Lightly brush the ears of corn with the melted butter. Place on a grill or a cast iron skillet over high heat and grill for about 10 minutes, turning the corn every few minutes. Remove the corn off the heat once all sides are slightly charred.
- Mix the mayo, cotija cheese, cayenne pepper, paprika, lime juice and cilantro in a small bowl.
- Cut the kernels of corn off the cob (here's an easy way to cut corn off the cob)
- Mix the corn kernels with the mayo mix. Garnish with an extra squeeze of lime juice and some more cilantro.
