- 8 pork chops (thick cut)

- pepper
- 4 Tbsp. vegetable oil (I prefer avocado)
- 2 yellow onions (or medium white, chopped)
- 4 garlic cloves (minced)
- 1 tsp. Mexican oregano (dried)
- 1/2 tsp. dried thyme
- 1 tsp. ground cumin
- 1/4 tsp. ceylon cinnamon (see note)
- 1/2 tsp. chipotle powder (ground)
- 1 1/2 tsp. piloncillo (grated, or packed dark brown sugar)
- 15 oz. fire roasted tomatoes
- 1 cup orange juice (freshly squeezed)
- 2 Tbsp. lime juice (freshly squeezed)
- 1 butternut squash (small, peeled, seeded and cut into chunks)
- 1 1/2 lb. baby potatoes (tiny, if you have larger potatoes you can cut them into chunks instead, but be sure to use thin-skinned boiling varieties)
- cilantro sprigs (for garnish, optional)
