- 500 grams minced beef
- 1 Tbsp. hot chilli powder
- 1 Tbsp. paprika
- 1 Tbsp. onion salt
- 1 Tbsp. garlic (granules)
- 1 Tbsp. herb mix
- 1 pinch black pepper
- 6 tomatoes (large)
- tomatoes (heirloom baby, cherry tomatoes, 180g)
- 8 oz. sweet peppers (small, or red bell if you can't find these)
- 3 hot chili peppers (use less if you don't want it too spicy!)
- olive oil
- salt
- pepper
- 1 red onion (large, finely chopped)
- 2 garlic cloves (minced)
- 2 Tbsp. dried oregano
- 3 cups chicken stock
- 3 Tbsp. tomato purée
- 2 Tbsp. sugar
- 8 corn tortillas (I used large ones and trimmed to size)
- 14 oz. refried beans (400g)
- 1 orange bell pepper (or red, sliced in strips)
- 1 red onion (small, sliced)
- grated cheese (I used a mozzarella and cheddar mix, 300g)
