Mixed brown rice w quinoa and poured juice from canned jalapeños as part of liquid to cook those grains. Replaced chicken w a can of kidney beans (could also use chickpeas and I think it would be good).
Would add about a 1/2-1 cup plain Greek yogurt or sour cream next time right before putting in oven. Either that or a can of crushed tomatoes/more salsa

Now one of our favorite dishes I did add a bit more on the spices and would highly recommend the enchilada sauce over the salsa. Overall, tasty easy to make meal

Great flavor! The right amount of spice! I used ground turkey and no bean. I used some of the casserole to stuff a green pepper-that needed to be used .
