- 1/4 cup red wine vinegar
- 5 Tbsp. cotija cheese (crumbled)
- 2 bunches cilantro
- 1 1/2 cups mayonnaise
- 1/4 cup water
- 2 heads romaine lettuce (chopped and dried)
- 5 oz. cheese (Cojita, crumbled)
- 1 cup red bell pepper (julienned)
- 2 grilled chicken breasts (thin, thinly sliced or chopped)
- 2 cups corn tortillas (freshly fried strips of)
- pepitas (roasted optional, salted)
