- 1 Tbsp. coconut oil (or oil of choice)
- 1 onion (chopped)
- 2 cloves garlic (chopped)
- 1 carrot (chopped)
- 1/2 head green cabbage (around 2 lbs, coarsely chopped)
- 28 oz. diced tomatoes with juice
- 28 floz water (just fill your tomato can with water)
- 1 pkg. crumbles (soy chorizo, I used this one, but you could also use homemade; my vegan chorizo is not made as crumbles, though)

I tweaked it a little and added some spinach and great northern beans, plus added some chili lime salsa!!

Great combination of ingredients, very tasty. However, mine turned out a lot thicker (I guess, because of all the crumbles) than the picture where the soup looks more liquid. Still really good.

Wow <3 This is such a perfect winter soup. I added half a bunch of kale and 14 more ounces of both tomatoes & water. I used 10 cloves of garlic and added a bunch of spices: cumin, crushed red pepper flakes, ground chipotle pepper (spicy!), a bit of chili powder, salt and freshly ground pepper. This is going in the regular rotation. Thank you!!

amazing winter soup! i felt like it warmed my soul. Just the right amount of flavor amd seasoning. Only change I made was omitting the carrot because my grocery store was out 😬 don't think I missed too much though. I was really happy with this one.

This turned out so good. I thought the picture looked delicious! I served this with rice and cornbread

I enjoyed it. substituted Turkey meatballs and turkey crumbles for the chorizo. Added chicken broth and dried lime leaves. my office raved
