- 15 oz. corn (unsweetened, drained and rinsed)

- 1 cup cashews (soaked for at least 2 hours or overnight)

- 1/2 cup unsweetened almond milk (or water)
- 1/2 cup grape tomatoes (colorful, sliced)
- 1 jalapeno (or bell pepper, seeded and slice, optional)
- 2 stalks scallions (chopped)
- 1 avocado (ripe, sliced or cubed)
- 1 handful cilantro leaves (fresh, rinsed)
