  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 8 ounces frozen corn (defrosted, I used Trader Joe’s roasted corn)
  • 1 red onion (diced)
  • 1 serrano chili (seeded and minced)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon organic cane sugar
  • 1 tablespoon lemon juice (freshly squeezed)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon ground black pepper (freshly, adjust to taste)

    This was pretty good. I had to make a few substitutions (can of green chiles, for one) but the dressing is delicious.

    Delightfully fresh, savoury and overall just plain delicious! Love the spice mixture in the dressing and as mentioned, it definitely did get even better after sitting in the fridge for a few days. Gonna become a staple in our fridge!

    Excellent. I used white kidney beans (I like that they have a thinner skin), added half of a jicama - diced, and omitted the sugar. Huge hit with literally everyone who has tried it. I make a double batch so my husband can take it to work if he doesn’t have it as a midnight snack.
