This recipe is super simple, delicious, and full of flavor. I am obsessed with cobb salads, and this one varies from the traditional with the addition of mesquite seasoned shrimp, pepperjack cheese, and tangy bbq ranch dressing. ENJOY!

- 2 heads lettuce (green)
- 1/2 lb. cooked shrimp
- 1/4 cup mesquite seasoning
- 2 Tbsp. canola oil
- 1 large tomato (chopped)
- 1 bunch green onions (chopped)
- 4 hard boiled eggs (chopped)
- 1 avocado (large, pitted and diced)
- 1 cup pepper jack cheese (shredded)
- 1/2 cup bbq sauce
- 1 cup ranch dressing

Directions
- Marinate your shrimp in mesquite seasoning and canola oil for at least 30 minutes to overnight
- Mix ranch dressing with bbq sauce, set side
- Assemble salad, lettuce first, veggies on top
- Heat marinated shrimp on stove top over high heat for a few minutes
- Place shrimp on top of salad, drizzle with dressing
