- 2 Tbsp. i can't believe it's not butter! made with olive oil spread
- 1 cup regular or converted rice
- 1 onion (small, chopped)
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
- 1/8 tsp. dried thyme leaves, crushed (optional)
- 1 3/4 cups chicken broth
- 1/4 cup almonds
- 1 tsp. fresh parsley (chopped, optional)

Directions
- Melt I Can't Believe It's Not Butter!® made with Olive Oil Spread in 2-quart saucepan over medium-high heat and cook rice, onion, salt, pepper and thyme, stirring occasionally, 4 minutes or until rice is golden. Add broth and bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Let stand 5 minutes. Stir in almonds and parsley.
