- 1 bell pepper (cut into strips)
- 1/2 sweet onion (cut into slices)
- 1/2 cup fresh herbs (your favorite, if available, a sprinkle of dried herbs will work in the winter months, we love to make this recipe with basil.)
- 1/2 cup cheese (your favorite, we love ours stuffed with bocconcini or feta)
- 2 packets minute rice (® Basmati or your favorite variety, 1 box has 4 packets)
- 2 Tbsp. olive oil
- salt
- pepper
- balsamic vinegar (Optional: High quality, to drizzle on top)
