- 400 grams chopped tomatoes (can)
- 2 tsp. dried oregano
- 600 grams aubergine (about 2 medium)

- 500 mL milk (hot)
- 4 Tbsp. plain flour
- 2 eggs (lightly beaten)
- handfuls grated romano cheese (or Parmesan about 3/4 of a cup)
- 1/2 tsp. ground nutmeg

It took longer than I thought it would and turned out huge ! The mix of vegetables made it interesting, but I found that 1 tsp of cinnamon powder overwhelmed the dish a bit. Also I don't like egg that much so next time I would just do a white sauce and top with a mix of cheddar and parmesan cheese, otherwise it was a nice variation and will keep my gang fed for a few nights !Thanks for sharing your recipe.
