- 2 slices red onion
- 1/2 tsp. black pepper
- 1 Tbsp. lemon juice
- 2 Tbsp. fresh basil leaves (chopped or torn, rubbed between your fingers to activate flavor)
- 1 tsp. fresh oregano leaves (rubbed between your fingers to activate flavor)
- 6 oz. boneless, skinless chicken breasts (4), each uncooked, – 1 ½ lbs total)
- 1 1/2 tsp. olive oil
- 2 tsp. seasoned rice vinegar (Nakano Original)
- 1/8 tsp. garlic powder
- 1/8 tsp. onion powder
- 1/8 tsp. dried basil
- 1/8 tsp. dried oregano
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 1/2 cup grape tomatoes (chopped, I cut mine in half on the bias)
- 1/2 cup cucumbers (chopped)
- 12 pitted kalamata olives (cut in half)
- 1 Tbsp. fresh basil leaves (sliced or chopped)
- 1 slice red onion (thin chopped)
- 2 oz. crumbled feta cheese

Was absolutely delicious!
Before I even cooked the chicken I made the “topping” I added zucchini and red peppers., Legit amazing, I couldn’t stop eating it all on its own like a salad! Will be on my go to list for life!
