- 1 lb. cooked shrimp (medium, peeled, tails removed, cut into chunks and chilled)
- 1 cup couscous (cooked Israeli or regular, chilled, prepared according to package directions)
- 1 pt. grape tomatoes
- 1 pt. cherry tomatoes
- 14 oz. artichoke hearts (rinsed, drained and halved)
- 1 cup olives (Mediterranean, I used a mixture I found in the fresh olive display at Whole Foods.)
- 1/2 cup crumbled feta cheese
- 1/2 cup fresh herbs (minced, I used 2 tablespoons each of parsley, mint, oregano and chives)
- 2 Tbsp. toasted pine nuts
- 3 Tbsp. extra-virgin olive oil
- 1 Tbsp. lemon juice
- coarse salt
- pepper
