- 1/3 cup pine nuts
- 1/3 cup extra virgin olive oil
- 4 Tbsp. lemon juice (to taste, from 1 to 2 lemons)
- 1 shallot (large, finely chopped, about ½ cup)
- 1 clove garlic (pressed or minced)
- 1/2 tsp. fine sea salt (to taste)
- freshly ground black pepper (to taste)
- 15 oz. chickpeas (rinsed and drained, or 1 ½ cups cooked chickpeas)
- 1 pt. grape tomatoes (quartered)
- 4 oz. feta cheese (crumbled, ½ cup)
- 1/3 cup sliced kalamata olives (pitted and thinly)
- 1 medium zucchini (sliced into super thin rounds)
- 1 yellow squash (small, sliced into super thin rounds)
- 1/3 cup fresh basil (or flat-leaf parsley, chopped)
