you can eat all of it, shell is part of it. in fact the directions also suggests using other stuff to season the shell to eat in the directions

The filling is really good. BUT. It is a waste of butternut squash (unless I missed something!) the squash is not used in the recipe, as far as I can tell, and is basically a dish for the filling. I will make it again but will just put it in a casserole dish to bake it for a bit.
